Not All of Canada is Chili....

And now, just in time for spring, how about a Chili recipe?!!  I know there are some of you out there, who, on this 3rd day of spring, are NOT basking in the glow of the ever rising sun, and to you I give this recipe and wish you warmer days ahead.  Or maybe some of you just had a rainy cold day that felt like winter... like we just had, and need a little warmer-upper??  If so, this is also for you!

Yes the pot is huge!! (heeheehee) 

So first of all I have to say that I buy no name products all the time, first, in an effort to save money and second, because I really don't see any difference in the Brand name items.  Having said that, there are certain no name products that just don't cut it and I do buy the Brand name.  Here is one example of no name products that are just as good as the brand name...The kidney and Chick peas (the black beans were on sale so I bought them).  Yes perfectly acceptable to buy no name!!!


I have to take full credit for this recipe.  It isn't one that came from a book or TV show or web page.  It is truely and totally MINE!!!  (although there are the rare coincidences....)

First thing I do is to start browning the meat.  I used Extra lean ground beef (cause it was on sale!).  And as that is happening you should start to chop the veggies.  Today I used celery, red peppers, yellow peppers and green peppers.  You can add and omit as needed.  I was going to put in large chunks of mushroom (so my DH could pick it out) and olives but I forgot about them.  Which is really a shame cause it would have tasted marvelous!!!




Here is the meat once it is cooked.  There wasn't much fat in the bottom of the pan but I ALWAYS drain off the excess fat.


Leave the meat to drain in a collander in the sink while you cook the veggies.  You don't need to add any extra oil or anything cause you just use what was left in the pot from the meat.  (making this a one pot dinner!!)  I think I let them cook for about 5-7 mins stirring often.




Whenever I have a craving for chili, I always buy a package or two of the chili seasoning.  Again brand doesn't matter, just grab whatever is on sale.  Today I chose the "Old El Paso" cause it had been in the cupboard for about a month.


We love corn in our chili.  If you don't, that is ok, you don't have to add it.  But can I recommend getting peaches and cream variety, of any brand!  SOOO delicious!


Once the veggies (minus the corn) have had a chance to cook, add the meat back in.  Then (open the cans) and put in the beans and corn into the pot.  Let this cook for about 15-20 mins on MED to LOW heat.  Then serve HOT......Easy Peasy! (and only used on pot)!! 


So as you can see this pot is huge.. thought that I would show a picture of how BIG it actually is.  (It is on one of the smaller burners, cause the other front one doesn't work). We got it as a wedding present and it is one of the most versitile gifts we got!


As a side note:  I mix the chili sauce with about a cup of water (unlike what the package recommends), especially when making such a large pot of chili cause it gives the chili better flavor.  It seems to allow the flavors of the seasoning to disperse more evenly throughout the pot! (make sense??)


Here is what my chili looked like after I had already mixed in a bit of gratted cheese and sour cream.  You are probably saying gross.. but it is good!

Here is the recipe:  (opps almost forgot)

1 lb of ground hamburger (preferably extra lean)
2 stalks of celery, chopped
1/2 of each Red pepper, green pepper, yellow pepper, chopped and diced
1 cup corn (peaches and cream)
1 can of chick peas (juices included)
1 can of kidney beans (juices included)
1 can of black beans (juices included)
1 can of sliced olives (not in this recipe :(
6-7 med sized button mushrooms, chopped

Instructions... *see above*
OR
Brown hamburger, drain.  Add celery and peppers to pan.  Cook for 5-7 mins on Med to Low heat, stirring often.  (If adding in mushrooms, add during the last couple mins.)  Add in the hamburger, all cans of beans, corn, and olives.  Stir and let cook for an additional 15 mins on Low heat.  Serve hot and with topping of your choice and a dipper of choice, ie; buns or tortilla chips!

Cheaters Never Prosper... Ya Right!!!

CHEATER CHICKEN SOUVLAKI

Ok, so if you love Chicken Souvlaki in any greek resturant, like I do, then this recipe is VERY compareable!  I love that it is so easy to prepare and make.

For the first year of my sons life, I would be up nearly every day around 4am to nurse, so I would switch the TV onto the food network and the show Fixing Dinner was on at that, ungodly, hour of the morning... One day last year I was browzing around on the internet looking for, yet again, something to make for dinner that was different and yummy and I came across the Food Network Website and thought I should look up the Fixing Dinner site, seems as I hadn't nursed my son at 4am for at least 6+ months.  The recipe can be found here.

Now for the tips... if you use a bowl with a plastic bag placed inside, it makes for easy handling and less sticky chicken fingers...so to speak!


 The (bonless, skinless) chicken breasts... they are a bit cold/frozen still for easier cutting!

 The marinating ingredients...Extra Virgin Olive oil (evoo), white wine, Mrs Dash Italian seasoning (cause I didn't have oregano and you need this for the veggies anyways) and lemon juice.

This is after it is all mixed together.  The plastic bag is also good for mixing the ingredients together, no extra dirty spoons/dishes and then you just leave it in the bag to marinate.  (I left the chicken out on the counter to finish the thawing.)

The Veggies... Mushrooms, peppers, zucchini, celery, red onions. YUM!!


All the veggies cut up and ready for seasoning and oven.

With added Feta cheese, and I forgot to add the olives.  I love olives and it just adds more to the dish, in my opinion.


Another tip is to just us the store bought tzatziki, if you want this recipe to be even faster to make!
Also, I should add that in the recipe it says to put the chicken back on a low broil.  This means to put your stove on broil but don't move the rack up... leave the chicken in the middle of the oven and leave the oven door open just a bit!!!

A Kitchen Reno...

So I have to start out by saying that this kitchen reno has been a LONG time in the making.  It all started when my husband (boyfriend at the time) moved back from Fairview Alberta, where he was taking a college course.  We have taken soo long doing this reno for many reasons, but mostly because we either have no money but lots of time, or no time and lots of money.  We just recently got ourselves back on track and we were able to get the kitchen in workable order this past holiday season.  The first 3 picture are before (going from left to right).  Please excuse the mess, it turned into a dumping ground for "stuff"!  You should have seen the boxes and garbage bags full of crap we through away.....


 Oh I should explain this photo (above).. the big hole in the wall is so that we could run the electrical for the stove.  It will eventually be a wall that is flush to the bottom part and sticking out a bit at the top part of the wall (if that makes any sence)!! 

Ok so this next picture is of a big hole on the "other" side of the wall.  We are going to make a cupboard here, so we can access it from this side, seems how the other, "kitchen" side is blocked by the stove...

So that is the reno as it is today, we have been cooking and living in this kitchen for about a month now and I LOVE it.  We now just have to decide on countertops.  We are torn between butcher block and tile.. OR... do we just spend the extra money (that we now again don't have) and get something a little bit fancier!?

Toffee Bits Triangles



You can get the rest of the recipe here.  This is an quick and easy recipe that I made over the holidays. 


The ingredients...



 With this recipe I thought that I would use my dough beaters on my mixer.  I haven't used them alot, but don't recommend it with this recipe, use the regular ones.  Ok...so as I am doing this blog, I just realized that I used the wrong part of the egg... this is the egg white getting mixed in the bowl, I was supposed to use the yolk...opps!  FYI...They still turned out good!!!


This is it just as I put it in the oven...


 You must get the chocolate chips (and the skor bits that you should have already opened) ready to go before the bar comes out of the oven....


...So you can sprinkle them on the HOT bar after it is out of the oven...


....Then you wait about 5 mins and spread it around...


...Then sprinkle on the bits. 
Hint: do this by hand, (putting the bits in my hand rather than sprinkling from the bag), cause it makes for better distribution of the skor bits!!!


...Then let it cool...either on the counter, or in the fridge (if you want it to cool faster)!

DELICIOUS....!!!

Beginner Scarf

This was by far the easiest scarf ever!  And the easiest crochet project to date. I have looked high and low for this pattern and been on all the crochet websites out there, but I can't seem to find this pattern..Sorry.  However, it is just rows and rows of sc (single crochet), with tassels at the ends. 



Here is a picture of me wearing it, (don't mind the rocking hair style and the bags under my eyes that have formed from being up multiple times a night and then being up at 5:30 most mornings!!!)
 Here is another picture from the side all wound up and ready for gifting.  I gave it to my sister for christmas and I hope she is getting some use of it and that it isn't too scratchy.  If I ever do a scarf again I will use a softer yarn.  This is one thing that I have learned in the short time that I have been crocheting, is to use the right crochet hook and the right yarn for the project.

"Mess up and You Will Be Rewarded" Cookies

OMG   two post in two days... that is amazing, so far on the right path!!!

Away from my crafts and onto baking today...

This recipe I got from a cookbook magazine that I picked up in 2009.  It is called Taste of Home, Cookies and Bars.  It is by far one of my favorite cookbooks for baking that I have.  Although, some of the recipes call for things that I have never heard of, and I think that is because it is a US printed magazine and all the recipes are submitted by US residence.

My 2 and a half year old love to help (and by help I mean lick the baking as we go... even the uncooked stuff).  Here he is showing what cookie cutters we will use...there is also a gingerbread boy cutter

So if there is one lesson I had learned a LONG time ago is to always make sure you have the right ingredients AND the correct amounts BEFORE you start baking....

OOOOPPPPSSSS!!!!,..... guess I messed up on this one...this measuring cup is supposed to be FULL with flour..Yikes... what to do?  Call my husband, he was out and about anyways!  Thanks for saving my butt yet again Sandy!

So this is what it looked like before I put it into the fridge.  Must warn you if you choose to make these, refridgerate them overnight or at least 8 hrs... only 30 mins just isn't enough!

I had an AMAZING discovery while I was decorating these cookies!!!  I had remembered that my husband had gone in a baking competition in Grade 11 and had a bunch of supplies in our storage room... look what I found!!!!

So I started to experiment with the tips on these cookies and this is how they turned out:
