Ok, so if you love Chicken Souvlaki in any greek resturant, like I do, then this recipe is VERY compareable! I love that it is so easy to prepare and make.
For the first year of my sons life, I would be up nearly every day around 4am to nurse, so I would switch the TV onto the food network and the show Fixing Dinner was on at that, ungodly, hour of the morning... One day last year I was browzing around on the internet looking for, yet again, something to make for dinner that was different and yummy and I came across the Food Network Website and thought I should look up the Fixing Dinner site, seems as I hadn't nursed my son at 4am for at least 6+ months. Now for the tips... if you use a bowl with a plastic bag placed inside, it makes for easy handling and less sticky chicken fingers...so to speak!
This is after it is all mixed together. The plastic bag is also good for mixing the ingredients together, no extra dirty spoons/dishes and then you just leave it in the bag to marinate. (I left the chicken out on the counter to finish the thawing.)

With added Feta cheese, and I forgot to add the olives. I love olives and it just adds more to the dish, in my opinion.
Another tip is to just us the store bought tzatziki, if you want this recipe to be even faster to make!
Also, I should add that in the recipe it says to put the chicken back on a low broil. This means to put your stove on broil but don't move the rack up... leave the chicken in the middle of the oven and leave the oven door open just a bit!!!Cheers!
